Flavorful, brilliant and refreshing are the words that best describe Rachel Ama’s Vegan Eats cookbook. Rachel Ama is most well known as the beautiful, spirited, sometimes comical YouTuber who shares some of the most amazing vegan recipes delicately doused in the most scrumptious vibes.
I’m a breakfast food junky so I was especially fond of several of the breakfast recipes in the cookbook. Rachel Ama’s Vegan Eats breakfast recipes are everything that breakfast should be. They’re refreshing, satisfying and delicious.
I was particularly fond of the Coconut Vanilla Chia Pudding With Mango Puree and the Quick Mini Chocolate Croissants. Both recipes were flavorful, quick and easy to make. Adding the mango puree to the chia pudding was poetic. It is the much needed spark that every chia pudding recipe needs. The classic brilliance of the Quick Mini Chocolate Croissants really got my creative juices flowing. Like many of Rachel’s recipes it gave me some much needed culinary confidence.
Another recipe worth mentioning is the All-greens Chunky Butter Bean Soup With Parsnip Crisps. It is a most heart-warming recipe that totally captures the essence of a crisp, Fall day.
The fusion of Rachel’s Caribbean and West African roots give her vegan recipes a pop of flavor that is absent in many other cookbooks. Overall, Rachel Ama’s Vegan Eats cookbook holds true to her belief that vegan food need not compromise on taste or nutrition.
