Our review of a cookbook that just has the good stuff…
Most known for sharing paleo, vegan and gluten-free recipes on IG and her blog, Rachel Mansfield has now delivered us all of that goodness in a cookbook. Just The Good Stuff is a plant based cookbook filled with all of our guilty pleasures. The caveat being, Mansfield gives us flavorful comfort food made healthy so its all the culinary pleasure without any of the guilt.
From meal time comfort food to snacks Mansfield delivers on the goods every time. Through the use of innovative flavor combinations she effectively gives you healthy ingredients without ever compromising flavor.
Then to make healthy eating even easier Mansfield thoughtfully includes some thorough food education, shopping lists and meal-prep guides. Then again surpassing our expectations Mansfield includes the most delightful commentary throughout making this more than just a cookbook. Each recipe makes you a part of it’s story of goodness.
Just try the Banana Bread, Dreamy Coconut Flour Breakfast Cake, Soba Noodle Veggie Stir Fry, Ginger-Scallion Turkey Burgers with Spicy Coconut Peanut Sauce, Vegan Style Animal Fries and Snickerdoodle recipes and you’ll be shouting their praises. The Netflix and Chill snacks are the absolute best. You are bound to have several favorites in this cookbook. So get ready for the culinary journey of your life.
Ultimately, Mansfield gives us a deliciously complex layer of flavors that both fuel the body and heal the heart. She reminds us of the delicate balance of graciously using the wonderful indulgence of plant based food to heal. This cookbook is a must have.
